The Watervale Hotel is a tourism beacon for the Clare Valley thanks to its trailblazing creative licensee and executive chef Nicola Palmer – who took a chance to create something special despite pandemic setbacks.
After two years of renovations, the new hotel was set to open in March 2020 but was immediately closed due to the pandemic. Nicola saw the lockdown as an opportunity to curate premium experiences that would appeal to consumers in the COVID normal environment.
